no-bake bars in under 15 mins

While I love RX bars dearly, the company did take a little bit of a hit last summer when they got smacked with a class action lawsuit accusing them of not being as clean as they claim. As far as I’m concerned they are one of the only bars that I can eat, they taste amazing and they fill me up - but all of that aside, I am aware that they are not organic. Granted I can not promise that I will NEVER eat a prepackaged RX bar again, but this recipe has definitely cleaned up my favorite treat.

ORGANIC CHOCOLATE SEA SALT RX-wel BARS

organic, gluten free, dairy free, soy free, paleo, (can be vegan*)

Makes 12 bars

Organic Chocolate Sea Salt RX-wel Bar Recipe

Ingredients

+ 1 cup organic dry roasted & salted cashews

+ 1 cup organic raw almonds

+ 1/3 cup organic cacao powder

+ 1/2 cup vanilla bean collagen peptides * to make vegan, replace with vanilla bean powder

+ 2 tbsp organic maca powder

+ 1 tsp organic coconut oil

+ EatingEvolved midnight coconut chocolate bar (or any dark chocolate bar that is 100% cacao)

+ 20 organic pitted dates

+ himalayan pink salt

+ parchment or wax paper - FUN FACT: I learned that parchment paper and wax paper serve the same purpose, essentially; except for when it comes to heat. Wax paper is not heat resistant. Do not ever use wax paper in the oven. The wax can actually melt off of the paper and catch the paper on fire. Since this recipe does not involve baking or heating of any kind, either works.

20 pitted dates

- blend until it creates a chocolatey paste

Organic Chocolate Sea Salt RX-wel Bar Recipe

Put a sheet of parchment or wax paper down on a baking tray. Dump your chocolatey mix onto the tray and lay another piece of paper on top. Press the paste down and even it out - you can use a spatula or a rolling pin, or just your hands - until it is about 1/4 inch. Remove the top layer of paper and cut into small rectangles (this recipe makes about 12 bars).

Last but not least, to complete your sweat and salty treat, sprinkle the Himalayan Pink Salt on top.

PRO CLEAN UP #EXWELTIP: The dates make it a sticky project to clean the blender. Simply put hot water and dish soap into your blender and turn it on for about a minute. If that does not remove everything you can add another minute, or wipe the remainder by hand but trust me, this is a life (and time) saver.
