YOUR NEW FAVORITE SWEET BEET TREAT
I don’t trust people who don’t eat dessert.
I have the biggest sweet tooth.
I could literally eat grass all day if I get to have dessert after.
That being said, I am gluten free and try to stay away from dairy and soy, along with super processsd sugars, etc, ya know blah blah. So I’ve had to get creative with my dessert choices to keep my body functioning at an optimal level while also staying mentally sane with sweetness!
Last year I was invited to a cookie swap - ya know where a bunch of strangers (friends of friends) bake their favorite holiday treats and lay them out buffet style while you all squish into a NYC apartment… this was clearly PREcovid and probably off the sanitized table for the next few years.
But anywhoooo, I botched the super clean cookies I was excited to make. They were truly uneditable. I don’t even think the dogs at the party would have mistaken them for food.... I had to think on my toes and with some inspo from friends crafted a quick fudge situation that ended up being a HUGE success if I do say so myself. Not to brag but it was the first plate to be licked clean at the party (precovid, calm down) and was probably one of my proudest moments in life thus far.
Since then I have perfected the “recipe” if you even want to call it that. I am strongly anti-baking until further notice, but this is a fool-proof, crowd pleasing, sweet tooth satisfying treat that won't break the bank, take hours to prep or make you feel gross after indulging in.

EXWEL SWEET BEET TREATS
ingredients: 1 package of Love Beets Organic Whole Beets, 1.5 cups of chocolate chips (or chunks), 1 tbsp organic coconut oil
> melt 1 tbsp of coconut oil with 1.5 cups of chocolate * I prefer Enjoy Life Semisweet chips or Hu Gems
> blend 1 package of Love Beets Organic Whole Beets until creamy
> blend the melted chocolate with the creamy beets
> pour into a container & refrigerate for 2-3 hours or until firm
> slice & serve
I recommend storing in the fridge until you are ready to serve them as they begin to soften at room temperature.
